Can you believe we are moving into the Summer? Geeze, time just seems to fly by. All those day I had wished it would hurry up...
Anyway, here it is another Friday and it is time to share and enjoy cyber friendship. Last week I was busy and forgot to post so, I have two weeks worth of #100HappyDays for you.
I am so rushing in here on Friday afternoon. It seems like I have been busy with...well, everything. I cannot believe it is even March 1st. WOW!
So, today is National Peanut Butter Lover's Day. I thought I would share some recipes I found using peanut butter.

It's Friday and gorgeous outside...well, at least here it is! Ok, I have never done Fashback Friday but here is one for you. This is my kiddos and their God-parents on the day of their baptism. That is my Mom and Uncle to the left. They are Godparents to my daughter. My Dad is in the foreground. On the right is Kelly, one of my best friends and Chris whom was one of my best guy friends. He is now deceased.

The Winter Olympic games are finally here. Are you watching?
I do like watching the opening ceremonies to see what each host country does with it but other than that, I really do not get into it too much. I may see something here or there. In the winter games I like to watch the ice skating competitions, especially couples...they wow me.
If you do watch the games there are several things you can do as a family to enhance the experience.
1. Today is National Bubble Gum Day too so, have a bubble gum competition.
2. Set up a mini course inside your home or backyard and "compete".
3. Host an Olympic Party
4. Keep a large chart of all the medal winners for each country.
5. Make food from the host country and have a tasting day.
6. Create your own medals using materials around your house.
7. Explore what countries have come to the games and the flags from each. Draw each flag and cut them out.
8. Collect the pins
As you can see, this is only a few ideas you can do. There are myriads of ideas and of course you can always go to my Pinterest board or those of others and get ideas too!
February is heart healthy month. My husband had a heart attack the year before I met him. So, to say he needs to take care of his heart is an understatement. He did well for a few years but has slacked off. Yes, I get concerned about it.
My own health is another issue and just like everyone I know, it could also use some improvement and needs to be taken care of. So, for the month of February we have decided to do something about that as an experiment of sorts.
For the entire month we have decided to go vegetarian. I know that some of you out there are gasping at the notion. Others of you are clapping in rejoice as you have been all along. Suffice it to say, it is not the easiest of choices for us. We are meat eaters!
However, my husband and I are committed to this. We want to see if eating vegetarian will really make a difference. We want to see if it will make a difference in our grocery bill too. If we like the change, we may let the experiment go longer.
In preparation, we took our calendar and filled in meals for every day. We looked up vegetarian meals online and in Pinterest. As it turns out, I have been saving recipes for a long time as my cousin is a vegetarian.Yesterday, Tamirisc went shopping for our first week. So, it is a go as of tomorrow.
I will blog how it goes and maybe share a recipe or two. Wish us luck.
Today I am following along with Mama Kat and her writing prompts. You do know that is how she started out don't you? You know before she became the YouTube sensation she is now! *grins*
Anyway, one of the prompts is my top 5 Christmas songs. Well, since I love music and the world needs a break from all of the idiocy going lately, this sounded good to me.
Let's see, in no particular order...
1. Mary Did You Know?
This song probably does hit close to the #1 song for me. I love the blend of Kenny Rogers and Wynonna Judd's voices. No one seems to have sung it better in my mind. The thought that such a younger girl would have known what she was bringing into the world boggles the mind.
2. I'm Dreaming of a White Christmas
This song is without a doubt a favorite of mine. I love Bing's crooner voice. To me, he just exudes Mr. Christmas.
3. Little Drummer Boy
I suppose I have to put this one among my favorites. Of course it is another Bing song but this arrangement with David Bowe is just top notch and I do not think has been matched since.
4. Rudolph The Red Nosed Reindeer
This next song I am putting on my list because it reminds me of my childhood. We owned the album of Gene Autry and was played so much it had skips in it. In my mind, no one else really can sing the song like he did. He was also the first to record the song which became the #1 best selling song on the Billboard charts for 1949 which to me, makes it a winner.
5. Keep Christmas With You
There are tons of songs that I could put on this list and it is really hard to narrow but ultimately, I had to go with this one. This song is only one of many on the Sesame Street Christmas show that year.
This movie I have watched with my children every Christmas since they were little. The new generation has begun watching it with their parents too. The song reminds of us of how we should be at this time of year but throughout the year in its entirety. I hope you like it as much as I do.

Growing up in my parent's household, Mom would always make great use of whatever leftovers we had from Thanksgiving dinner the night before. It was not unusual to wake up to her making us potato latkes or as she called them potato pancakes.
She did not make them traditional as the recipe I am going to include below, but they were still yummy! She usually took the leftover mashed potatoes and smashed some on to an electric griddle with a bit of oil. She would fry them up just so and flip, the other side got the same. We always ate them just with some butter.
It's Friday and here in my neck of the world we have the white stuff! Yep, it snowed the other day but it is simply a prequel to what usually comes. Watch out!
Stuff-ing: The other day I came across how to make a turkey in 15 easy steps. Now, I know some of us are not the world's greatest chefs so, this should help.
Birthday stuff: This lady right here is celebrating her 74th birthday today. Isn't she pretty?
What, you don't know her? Well, that is my Mother! Happy Birthday Mom!
